Volume 3 comes out January 18, 2022 according to amazon but V1 and V2 official have come out.

No, those are the manga, not the light novels. So technically, unless its gets either picked up to be official translated or fan translated as a light novel, I don't think volume 2 will be here any time soon.

Mmm. If I had to guess, the fan translator either got busy, forgot or got bored. And I'm pretty sure the author of this book got banned on Syosetu for some reason which explains why I find next to nothing on the web novels whether in Japan or America. But that's my guess. Who knows the truth. Oh and the publisher of the light novel version is Alpha Polis which is more or less famed for not letting their books be official translated into English.

So, update yay! There are 7 volumes currently out (in Japanese obviously) with the latest one being released November 25, 2021. So series technically not dead.
